how is mitchell a ginger ? neither jay nor dede are ginger

in the first few episodes where margaret appears, she seems to have ginger hair until it becomes grey

[also not to mention in season 10-11 something something, jay and marg joke mitchell being their son]

The one part in the show I never really got (and maybe I'm just stupid, I don't know,) was when Manny and Jay talk about the shower situation while camping. Manny states he's at his "target weight" just not his "target height," as he reluctantly admits to Jay. Jay responds, "got it," and give his step-son a bit of a pep-talk. What I didn't understand was what the exchange was meant to imply. Was it meaning he actually was insecure about his weight, he just didn't want to say it? Or was it his height??? I'm not sure

He said that he knew that the show would be a hit because Ed O’Neil (Jay) said so.
