Rachel is one of Claire Dunphy's old friends from High School who is seen in "The Wow Factor".
She recognizes Jay, who is supposed to be taking Joe to a baby class. She is taking her 2 sons to see a film called Skyfall. Rachel tells him about her life about how she's been married for 15 years and has kids, commenting on the fact that she misses babies because her kids doesn't want her to sit with them. Instead of going to the baby class, Jay ends up going to the film and runs into Rachel again, who offers to take him out for a little while. Gloria and Manny, who also happen to be at the mall, see Rachel holding Joe (due to Manny recognising that the baby has got the same blanket) which makes Gloria to get angry at Jay.
Rachel's fate of what Gloria had done to her and what had happened with her and Jay after Gloria took Joe back is left a mystery.
